Denaturation

MCAT glossary · Biological & Biochemical Foundations of Living Systems

Definition

The loss of a protein's higher-order structure, and hence its function, without breaking peptide bonds.

Denaturation in plain English

A protein isn't just a string of building blocks — that string folds into a very specific 3-D shape, and the shape is what lets it do its job. Denaturation is when that folded shape falls apart (from heat, harsh chemicals, or extreme acidity), so the protein stops working, even though the underlying chain isn't actually chopped up — the strong bonds linking the building blocks in a row stay intact. A cracked egg turning from clear goo to solid white when it hits a hot pan is denaturation you can watch: the heat unfolds the proteins and they clump, and you can't un-fry it back to raw.
